Dave and I actually really like these tacos even though they don’t have any meat in them. It’s surprising because Dave is a big meat and potatoes guy, so meatless anything is a big deal. Yes I still fry the shells, but it doesn’t add a ton of fat, plus it gives it that little something extra. They’re delicious, and easier to make than traditional tacos. I make them exactly the same way I make the chicken tacos, but I replaced the meat with refried beans. Again the refried beans do add some fat, but they also add more flavor so that you don’t even miss the meat.
I make guacamole which adds even more flavor. I also used sour cream and cheese (so a little more fat) but I think its ok. The first time I made these I didn’t even tell Dave they were meatless until he noticed, which of course he did, but he said they were really good. We’ve had them a few times since, and he’s just happy to be eating tacos. The trick to keeping these “healthier” is to control the amount of sour cream and cheese you put on the tacos. Because I didn’t make meat it didn’t take as long to make the tacos, and I had a few less dishes to wash, which was nice. If you like the flour shells you could heat all of this stuff up in the microwave in minutes for a quick and easy meal.
Tortillas (fried mine, but you can use flour)
Can of black beans – heat up
Can of refried beans – heat up
Lettuce – shredded
Tomato – diced
Cheese – shredded
Fry the tortilla shells, heat up both types of beans, and serve with guacamole, sour cream, cheese, tomato, and lettuce.
