Make soup!  After making a few sandwiches with the left over turkey, I decided to make soup.  I made it very similarly to the way I make chicken noodle soup. I started by cutting off and setting aside the big pieces of left over turkey, then I boiled the rest for a little stock. (be sure to remove any excess fat before you throw the rest of the bird into boil, or your soup could turn out oily)  I also used the low sodium/fat chicken stock that I made chicken soup with.  After making the stock I add the chicken broth, then I threw in carrots, celery, and noodles.  I cut up the big left over pieces of turkey and added them to the soup in the last twenty minutes.  It was a great way to use up the rest of the turkey, and to feed everyone still hanging out after Thanksgiving.
