A friend of mine gave us a spaghetti squash to try out.  She gave me instructions on how to cook it in the microwave, it was pretty easy.  She told me she serves it just like spaghetti, with marinara sauce.  So I cooked it last night for dinner.

The squash turned out fine, but Dave was not a fan.  I thought it was pretty good.  The problem I think was the sauce.  I bought a different kind of sauce, it was on sale and it looked good, but I wasn’t fond of it.  I think maybe to give the spaghetti squash a fair shake, I’ll need to make the yummiest sauce I know and serve it with that.

However, there’s a problem with that plan.  I make a shrimp and artichoke sauce that I serve on linguini.  It’s really good and Dave loves it, but it‘s (as per Jane’s usual) not very healthy.  It’s not the shrimp or the artichokes, it’s the whole stick of butter that I put in it.

So, here’s what we’re gonna do.  I’m going to make the sauce the way I normally do, then I’m going to figure out how to make it healthier and make it again.  I think I’ll serve it with the spaghetti squash both ways.  That way I’ll truly find out if Dave disliked the squash, or was it just the sauce that wrecked it for him.
