My plan tonight was to bake the chicken I picked up at the store yesterday. Unfortunately I forgot to put it in brine. This actually turned out to be a good thing, because I got held up at work until really late. I won’t lie, I stopped at Taco Bell on my way home.
I was thinking about it, and it’s been quite a while since I’ve made baked chicken. This is mostly due to the fact that for about two dollars more, you can by an already roasted chicken at the grocery store. Now I know they can’t be very good for you, I mean you can see the yummy fat dripping right off them, but still, they were quick and easy. I also thought about the fact that we never just eat that chicken once. It’s a whole chicken, and it’s just Dave and I. It’s way too much food for two people. So we have chicken for dinner one night, then I would use the left over chicken to make soup or sandwiches. Like baked chicken, the soup is time consuming, (Less so when you use a store bought chicken). In the winter Dave loves this soup, it’s a perfect food to make on a Saturday, and eat again on Sunday.
So, as it turns out my forgetfulness may have been a good thing, because now instead on one meal I’m going to do three. Oven baked chicken, chicken Caesar salad, and chicken noodle soup with homemade noodles. I use both store bought noodles and homemade to make soup. While easy to make, the homemade noodles do take a long time to make, but Dave loves them. Three Meals – One Chicken. The next couple of days should be a kitchen frenzy!
